Our family really enjoys this potato quiche recipe. We eat it as a meal-prepped breakfast made the day prior or a light but hearty lunch. Since we typically make two quiches at a time, customization is crucial to keeping everyone satisfied. And chocies are fun! How to Make a Potato Quiche with Spinach, Peppers, and Tomatoes
Making an easy potato quiche is quite simple. As long as the potato base and egg/milk mixture(glue) are definite, you can’t go wrong. Mix in your favorite breakfast veggies and meats for a savory breakfast that works!
This is also a great intermediate recipe. It has multiple steps that aren’t hard and keep the chef in training practicing their chopping and dicing skills. This recipe can help build confidence in the kitchen around boiling things other than pasta.
Ingredients for an Easy Potato Quiche
- 5 medium yellow potatoes
- Russet potatoes and baby potatoes also work well. The size of each potato determines the boiling time.
- 1/2 yellow(orange or red) bell pepper, diced
- handful of baby spinach, chopped
- Remember, spinach is rich in nutrition, and you can hardly taste it in this recipe.
- handful of cherry tomatoes, halved
- Perfect way to use up garden cherry tomatoes!
- salt and pepper, to taste
- 1 Tablespoon avocado oil
- Avocado oil is my choice for this recipe. It is a healthier alternative to vegetable oil for baking, with a higher smoke point that makes it more stable at high temperatures and a better choice for adding moisture and healthy fats to baked goods and quiches!
- 3 eggs
- 1/2 cup milk
- I used whole milk.
- 1/2 cup shredded cheddar cheese
Instructions for a Breakfast Quiche Made from Potatoes and Spinach
Preheat the oven to 400°F. Lightly grease a 9-inch glass pie plate with cooking spray.
Then cut the yellow potatoes into 1.5-inch pieces and put them in a pot. Fill the pot with water just until it covers the potatoes. Then boil the potatoes until fork-tender, about 10 minutes. Drain off the water.
Next, press the cooked potatoes into the bottom of the pie plate using the back of a spoon or cup.
Then drizzle the oil on the potatoes and season with salt and pepper.
Now, evenly layer the spinach, peppers, and tomatoes on top of the potatoes.
In a medium mixing bowl, whisk the eggs and milk with a fork, add some salt and pepper, then pour this mixture over the vegetables and potatoes. Top the quiche with shredded cheddar cheese.
Finally, bake the quiche at 400°F for 25-30 minutes. Serve it warm and enjoy!
Tips and Tricks to a Great Potato Quiche
Make it your own and customize! Quiches are the perfect dish to customize and use up the last bit of whatever. Try onions instead of peppers. Not a fan of spinach? Don’t add it. We have kids who can’t stand tomatoes(which I personally love!), and so usually only half the dish is tomatoes. Try it with mushrooms.
Add a breakfast meat. Breakfast meats are so flavorful and are another good source of protein. Try adding bacon, ham, or a breakfast sausage. The best part is, you don’t need much. It could be the last bit left over from the weekend’s omelets, or you can meal prep and split a couple of pounds of sausage between this potato quiche and some awesome breakfast burritos using sausage gravy.
Make sure Potatoes are done right. No one likes undercooked, hard potatoes. Yuck! Making the perfect potatoes is not hard, and there are a few tricks to remember. What does fork-tender potatoes mean? The ideal “fork-tender” texture means the potato is soft but not mushy. So, step one, not too much water, just enough to cover the top of the potatoes. Use cold water. Step two: Start checking the potatoes at 10 minutes. Check one of the large potatoes. Smaller pieces or baby potatoes will cook faster than large whole or cubed potatoes. Lastly, drain promptly.
