Our family has fallen in love with these Pumpkin Bars with Cream Cheese Icing. We have made them too many times to admit since we were introduced to this easy bar recipe, and with just a few stocked items from our pantry and other staples, we can quickly whip up a delicious and praise-worthy dessert for any occasion. From an amazing Thanksgiving party or the weeknight family dining table, this dessert shines!

As my kids would exclaim, these pumpkin bars with cream cheese icing truly are the ‘best pumpkin pie cake!’ And once you sink your teeth into the creamy spiced icing and perfectly dense pumpkin bar, you will love them too!

Cream Cheese Frosted Pumpkin Bars

This straightforward dessert recipe is easy to follow so that you can enjoy these Pumpkin Bars with Cream Cheese Icing sooner rather than later. Just make sure to set out that butter and cream cheese!

Pumpkin Bar Ingredients

  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 2 teaspoons pumpkin pie spice
  • 1 cup vegetable oil
  • 3 large eggs
  • 1 cup brown sugar, light or dark
  • 1/3 cup sugar
  • 2 Tablespoons pure maple syrup
  • 15 ounces of can pumpkin puree, 1 can
  • 1 1/2 teaspoons vanilla extract

Cream Cheese Icing Ingredients

  • 8 ounces cream cheese, 1 block softened at room temperature
  • 1/4 cup salted butter, softened at room temperature
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon pumpkin pie spice

Directions for Pumpkin Bars with Cream Cheese Icing

First, preheat the oven to 350°F and lightly spray a 10×15-inch baking sheet with cooking oil.

Then, in a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and pumpkin pie spice.

Next, in a medium bowl, whisk or blend together the oil, eggs, brown sugar, sugar, maple syrup, pumpkin, and vanilla. Pour the wet ingredients into the dry and mix until fully combined, scraping the bottom and sides as needed.

Spread the batter in an even layer on the prepared baking sheet. Bake for 28-35 minutes. The pumpkin bars are done when an inserted toothpick comes out clean.

Lastly, remove the baked bars from the oven and let them cool completely.

Once the bars have cooled completely, beat the cream cheese and butter until smooth and creamy in a stand mixer or medium bowl with an electric mixer.

Next, add the powdered sugar, vanilla, pumpkin pie spice, and salt. Mix this on low for about 30 seconds and then on high until smooth.

Finally, spread the icing on the cooled pumpkin bars and add sprinkles! *To set the icing and for easier cutting, place bars in the refrigerator for at least 30 minutes before slicing. Serve and enjoy!

Pumkpin Bars with Cream Cheese Icing
