How to make Lemon Poppy Seed Bread
You will need two medium bowls and two bread loaf pans. Lightly spray the loaf pans with cooking spray and flour them by sprinkling flour on the grease and shifting it around until there’s a uniform light coating covering the bottom and three-quarters up the sides.
Gather your ingredients and separate them into wet and dry ingredients. In one medium bowl, combine the dry ingredients. This is the flour, poppy seeds, and baking powder. In the other bowl, combine the wet ingredients. These would be the beaten eggs, milk, oil, lemon, vanilla extract, and sugar.
Once you have the two parts, take the dry ingredients and slowly incorporate it into the wet. Do not overmix. Overmixing bread batter can create a tough, super-dense loaf once baked.
Lastly, pour the batter into the prepared loaf pans. I did use two loaf pans because I like a shorter loaf, and it keeps the loaf baking evenly; however, you can use just one pan. Bake the bread at 350 degrees Fahrenheit for 50-60 minutes or until a toothpick inserted in the middle of the loaf comes out clean. Done! A super yummy bread to bring to your next brunch, lunch, or mid-day snack time.

Lemon Poppy Seed Bread
Ingredients
Wet Ingredients
- 3 eggs beaten
- 1¼ cups milk
- ¾ cup oil
- 2 teaspoon lemon extract
- 1 teaspoon vanilla extract
- 1¼ cups sugar
Dry Ingredients
- 2¼ cups flour
- 2 tablespoons poppy seeds
- 1 tablespoon baking powder
Instructions
- Combine the dry ingredients (flour, seeds, and baking powder) in a bowl and set aside.
- In a sperate bowl, mix the wet ingridients (eggs, milk, oil, extracts, and sugar) together.
- Gradually mix the dry ingredients into the wet ingredients. Do not overmix.
- Pour into a greased and floured loaf pan. (I used TWO loaf pans for this recipe.)
- Bake at 350°F for 50-60 minutes or until a toothpick comes out clean when inserted into the middle of the loaf. Enjoy!
