How to make this Simple Salad
Start by having your favorite balsamic vinaigrette ready. I choose to make this one by Barefeet in the Kitchen. It came together beautifully and added just the right amount of flavor. Mix up your dressing and let it incorporate.
Next, pile your spinach in a quiche plate or 10-inch pie plate. This is the perfect time to use those fancy serving dishes or pie plates! Slice and arrange your Roma tomatoes. I choose to go in a circular pattern. Then sprinkle the dried basil on top followed by the shredded mozzarella cheese. Drizzle the balsamic dressing on right before serving. I do prefer to let this salad sit for an hour before serving in the refrigerator as it gives the dried basil flavor time to soak in and blend with the tomatoes. Serve and enjoy!

Ingredients
- 3 cups baby spinach about ¾ of a bag of baby spinach
- 6 Roma tomatoes sliced
- 2 teaspoons dried basil leaves
- 2 cups shredded mozzeralla cheese
- ¼ cup balasmic vinegrette dressing
Instructions

- Place spinach at the bottom of a quiche dish or 10 inch pie plate.
- Slice tomatoes and arrange in a single layer on top of spinach.
- Sprinkle dried basil evenly across and top with mozzeralla cheese.
