Juicy Roma tomatoes, dried basil, and mozzarella all layered on top of a bed of fresh spinach with a delightful homemade balsamic vinaigrette dressing drizzled on top is this balsamic tomato salad recipe. This spinach salad is a just handful of simple ingredients that come together to make a simple and savory salad.

How to make this Simple Salad

Start by having your favorite balsamic vinaigrette ready. I choose to make this one by Barefeet in the Kitchen. It came together beautifully and added just the right amount of flavor. Mix up your dressing and let it incorporate.

Next, pile your spinach in a quiche plate or 10-inch pie plate. This is the perfect time to use those fancy serving dishes or pie plates! Slice and arrange your Roma tomatoes. I choose to go in a circular pattern. Then sprinkle the dried basil on top followed by the shredded mozzarella cheese. Drizzle the balsamic dressing on right before serving. I do prefer to let this salad sit for an hour before serving in the refrigerator as it gives the dried basil flavor time to soak in and blend with the tomatoes. Serve and enjoy!

This easy and quick salad recipe is perfect for late summer when the tomatoes are plentiful!

Other Great Salads

This berry and spinach salad recipe is a winning combination of fresh red berries and crunchy walnuts top with tart onions. Add the sweet raspberry vinaigrette and it’s the best summer salad out there. A perfect blend of flavors in every bite!

Simplicity is the name of the game with this egg and bacon spinach salad. It combines the lightness of hard-boiled eggs and the richness of bacon bits styled over a bed of spinach. Add a sprinkle of croutons for crunch and drizzle on a tangy celery seed vinaigrette to finish off this sweet and savory salad.

Want to try something different? This looks soooo good! This easy black bean, corn and avocado salad is delicious enough to eat with a spoon, or scoop it up with tortilla chips for an evening snack!
