French’s crispy fried onions and cheese top a creamy browned ground beef and hash brown casserole for this simple, family-friendly Cheesy Ground Beef Hash Brown Cassole recipe.

When you want a hearty meal, turn to this easy ground beef casserole. It has simple yet delicious beef-and-cheese flavors(much like our popular Creamy Ground Beef and Bowtie Pasta recipe), with satisfying hash browns. It’s easy to make and filling. And you can easily dress it up with hot sauce and ketchup (we all have that family member who likes to do this, right?). A meat-and-potato lover’s dream, this is a man’s meal(that’s fun to say)… with yummy fried onions and cheese on top!

How to Make a Ground Beef Hash Brown Casserole

Making a ground beef and hash brown casserole requires a few solid steps and baking. I like that I can brown the meat, assemble the casserole, and then, while it’s baking, make a quick veggie side or simple salad, tidy the kitchen, and have a moment of peace before everyone sits down at the table.

Ingredients for Cheesy Ground Beef Harsh Brown Casserole

  • 1 pound of ground beef
  • 1 medium onion, diced
  • 1 Tablespoon minced garlic
  • 30 ounces frozen shredded hash browns
  • 1 cup sour cream
  • 10.5 ounces of cream of chicken
  • 10.5 ounces of cream of mushroom
    • Any “cream of” concentrate soup works.
  • 16 ounces of shredded cheddar cheese, divided
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon black pepper
  • 2 cups French’s Fried Onions

“Cream of” substitution recipe: makes enough for 1 – 10.5 ounce can of cream of chicken soup. Double this recipe if you need to replace both cream of chicken and cream of mushroom. This is a great recipe for when you forget to buy the cream of chicken soup, or even if you would rather keep to more of a ‘Whole Foods’ casserole.

  • 1 cup heavy whipping cream
  • 2 teaspoons chicken broth concentrate/powder/cubes
    • They would be Better Than Bouillon or Chicken Bouillon Cubes
  • 2 Tablespoons flour

Instructions: In a medium saucepan over medium heat, whisk the flour into the whipping cream, then stir in the chicken broth concentrate. Bring it to a boil. Boil the homemade cream of chicken soup until it thickens, and then use it as needed.

Instructions for an Easy Beef and Potatoes Casserole

First, preheat the oven to 400°F.

Then, in a large 5QT cast-iron skillet(or stainless steel pan), brown the ground beef until no longer pink with the diced onion. Once browned, add the minced garlic and let it cook for a minute. Then drain away any excess grease. (We use very lean meat and don’t drain off the drippings) Once cooked, set the meat aside.

In a large mixing bowl, combine the frozen hash browns, cream of chicken and cream of mushroom soup, 8 ounces of shredded cheese, sour cream, garlic powder, onion powder, and pepper.

Then add the cooked meat to the large bowl with the hash browns, and stir to combine. Place this meat-and-potato mixture back into the oven-safe skillet/cast iron or a lightly greased 9×13-inch baking dish.

Bake the casserole uncovered for 45 minutes.

Finally, remove the dish from the oven. Sprinkle the French’s Fried Onions and the remaining shredded cheese over the top of it. Bake the dish again until the onions are a deep golden brown, about 10 minutes.

Storing a Ground Beef Casserole

Store the casserole in an airtight container in the refrigerator for up to 5 days. Reheat in an oven-safe dish in the oven or in the microwave.
