There’s a lot to be said about a soup so simple as this baked bean soup. When we first tried it I thought it would never go over well but the sweet taste of the baked beans won us over. And I think the macaroni tricked my littles into thinking it’s a ‘kid’ soup helping them look past the beans in it. Lastly, I love that it is a soup recipe that uses pantry staples for a quick, light lunch idea!

How to make Baked Bean and Macaroni Soup

First, you will take the 8 ounces of elbow/macaroni noodles and cook them per box instruction. Drain.

Next, add the large can of baked beans(28 ounces), petite diced tomatoes(28 ounces), and 1/2 cup water to the pot of drained noodles. Then bring the soup to a boil, simmer for a couple of minutes, and it’s ready to serve!

Enjoy this Baked Bean and Macaroni soup with a fresh side salad, steamed vegetables, or buttered bread.

Tips:

We used brown sugar hickory flavored baked beans and it gave a fabulous flavor to the soup.

Short on time? Want to make this a carb-friendly soup? You can skip the macaroni noodles!
