Our family loves this Easy Lasagna Soup Recipe because it brings us the comforting flavors of lasagna in a fraction of the time it actually takes to make a pan of lasagna. The soup is constructed in the same pot during the whole recipe, from browning the beef to serving. Then, since you cook the noodles in the beef broth and marinara, there is not only less time involved but also fewer messy dishes! This is a savory soup that is perfect for winter months!

Lasagna Soup can also be customized to the tastes of many. As a mom, I always look for ways to hide veggies in my kid’s meals for extra vitamins and minerals. This easy lasagna soup is perfect for that! If desired, and for extra flavor, add more vegetables like mushrooms, celery, carrots, and bell peppers with the broth and noodles and cook as instructed. Add a handful of baby spinach a few minutes before the end of the summer for some dark, leafy greens in your meal. And crusty garlic bread or cheesy homemade breadsticks are the perfect sides!

How to Make Easy Lasagna Soup

This EASY Lasagna Soup Recipe is quick and to the point, like many of our easy main dish meals. Simply cook the meat, boil the noodles, top with cheese, and in 30 minutes, you have an excellent soup to enjoy! I love easy soup recipes that come together in just a few steps!

Ingredients to an Easy Lasagna Soup Recipe

  • 1 pound lean ground beef
  • 2 teaspoons minced garlic
  • 1 medium onion, diced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 23 ounces marinara sauce, 1 jar
  • 4 cups beef broth
  • 2 cups dried pasta, broken bite-size lasagna noodles or rotini noodles
    • 2 cups of lasagna noodles broken into bite-size pieces is about 5 full-size lasagna noodles.
  • 1/2 cup ricotta cheese
  • 1/2 cup freshly shredded mozzarella cheese
  • 1 Tablespoon freshly chopped parsley for garnish
All the ingredients to easy lasagna soup. Ground beef, minced garlic, chopped onion, Italian seasoning, salt, pepper, beef broth, marinara, bite-size lasagna noodles, ricotta cheese, mozzarella cheese, and parsley.

Instructions for an Easy Lasagna Soup Recipe

First, in a stock pot, browned the ground beef with the minced garlic and onions until no longer pink.

Next, add the salt, pepper, Italian seasoning, marinara sauce, beef broth, and noodles. Stir and bring to a boil. Then, cover the pot with a lid and simmer for 20 minutes or until the noodles are cooked through.

Storing Lasagna Soup

Leftover lasagna soup can be stored in the refrigerator for up to one week. It can be reheated on the stove or in the microwave.
