Yum! This was a super popular easy soup recipe in the early 2000s, so when I stumbled upon the recipe from my sister, I had to make it again. This taco soup is the bomb! So tasty and hearty, it has to be one of the best soups ever- and I don’t say that lightly. The Ranch and taco seasoning packets blend wonderfully with the ground beef, beans, and veggies for a hearty soup that tastes amazing!

My kids loved it as well. It’s maybe a touch better than our favorite Ground Beef with Frozen Vegetables soup. It’s that excellent flavor, and the sour cream and tortilla chips topping make it so fun!

Ingredients for 7-Can Taco Soup

  • 1 lb browned ground beef
    • If you prefer a more hearty soup, add up 2 pounds of ground beef.
    • Brown the beef in a medium skillet until no longer pink. Season lightly with salt, pepper, onion, and/or garlic powder if desired. Drain off the excess grease.
  • 1 can of green beans(14.5 ounces), undrained
  • 1 can(15.25 ounces) of corn, undrained
  • 1 can(10 ounces) of Rotel, undrained(tomatoes with chilies, located near the canned tomatoes in store)
  • 1 can(14.5 ounces) of stewed tomatoes or diced tomatoes
    • We often use two cans of stewed tomatoes to thin the soup and stretch it further!
  • 1 can(15 ounce) of tomato sauce
  • 1 can(15.5 ounces) of chili beans, undrained
  • 1 can(15.25 ounces) of black beans, drained and rinsed
  • 1 Ranch seasoning packet
  • 1 Taco seasoning packet
    • Use your desired heat. If you want a taco soup with more kick and spice, use hot taco seasoning. Use a mild taco seasoning packet if you want a mild taco soup.
