A delicious casserole made with taco meat, shredded hash browns, and cheddar cheese, baked to perfection – this is our family’s favorite Taco Hashbrown Casserole recipe!

Why do casseroles get such a bad rap when they can be sooooo good? Even though casserole might just be a fancy name for an oven-baked goulash (you know, when you just throw together ingredients and make it a meal.), casseroles feed families every night and keep moms sane. Casseroles make it possible to get all food groups in one dish. Casseroles nourish the neighbors who just had a new baby, a grieving friend, and relatives from out of town. Casseroles work, and this casserole recipe is a keeper. We love this recipe for a quick weekday lunch. Taco Hashbrown Casserole is perfect for hungry kids on the go!

How to Make Taco Hashbrown Casserole

With its sturdy potato hash brown base, cream cheddar cheese soup, and just a bit of taco meat kick, this casserole is your basic comfort food. With it’s simple flavors and easy prep, this casserole is a winner!

Tender potato hashbrowns, taco meat and cheese in casserole form baked to perfection.

Ingredients

  • 1 pound lean ground beef
  • 1 teaspoon garlic powder
  • 1 teaspoon minced, dried onion powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 26 ounces of frozen hash browns
  • 10.5 ounces(1 can) cheddar cheese soup
  • 1 ounce packet of taco seasoning
  • 2 cups shredded cheddar cheese

Directions

First, preheat your oven to 375°F and lightly grease a 9×13 baking dish.

Then, in a skillet over medium heat, brown the ground beef with garlic powder, minced onion powder, black pepper, and salt until no longer pink. Drain off the excess fat.

Next, in a large bowl, mix the frozen hash browns, taco seasoning, ground beef, cheddar cheese soup, and half of the shredded cheddar cheese.

Add the mixture to the baking dish, spread evenly, and top with the remaining shredded cheese.

Bake the Taco Hashbrown Casserole for 25-30 minutes uncovered. Top with sour cream, salsa, or your favorite taco toppings. Enjoy!

Tips and Tricks

This Taco Hashbrown Casserole is perfect for meal-prep lunches. Make it for Sunday supper and enjoy quick, delicious meals throughout the week.

We often use leftover taco meat for the base, saving us time at the stove. This gives our family two meal options out of one meat prep. By preparing a large quantity of taco meat, we can have tacos for Taco Tuesday and then turn around and have Taco Hashbrown Casserole for dinner on Wednesday.
