These peanut butter cheerio bars have been a staple in our extended family for years. Since they are made from pantry staples, Cheerio bars are easy to make when you need that last-minute side… and we make them all the time, for every occasion. They have been a poolside snack, a dessert at family gatherings, and even a quick breakfast for our family on the go. Everyone seems to enjoy this simple and sweet cereal bar, from the grandkids to the adults!
Peanut Butter Cheerio Bars with Corn Syrup
Chewy and oddly enticing, this Cheerios bars recipe is made with pantry staples and is crazy easy!
Ingredients for Cheerio Bars
- 1/4 cup butter, melted
- 3/4 cup Karo light corn syrup
- 3/4 cup brown sugar
- 1/2 teaspoon salt
- 3/4 cup creamy peanut butter
- 8 1/2 cups Cheerios
- This cereal bar recipe works well with 8-10 cups of Cheerios. If you like a gooey cereal bar with more peanut butter taste, use 8 cups of Cheerios. If you have a large crowd to feed or want to stretch your bars, use 10 cups of Cheerios.
Directions
First, measure the 8 1/2 cups of Cheerios in a large bowl and lightly grease a 9×13 dish with cooking spray. Set these both aside.
Then, melt the butter in a saucepan on low to medium heat. Once the butter is melted, add in the corn syrup, brown sugar, and salt. Stir these constantly until the edges start to boil, then immediately remove the pan from heat. Then stir in the creamy peanut butter.
*Pro Tip* Be careful not to over boil the Karo and sugar because the more the light corn syrup boils, the harder the cereal bars will set up. They will still be delicious but hard to chew.
Now pour the peanut butter mixture over the Cheerios and gently stir until all cheerios are coated. Then evenly spread the Cheerios into a 9×13 pan, and press them into the pan using parchment paper or the back of the spatula. Let cool for at least 2 hours before serving. Cut the Cheerios into bars and serve.
Storing Peanut Butter Cheerio Bars
Store any leftover Cheerio Bars in an airtight container at room temperature for up to 7-10 days.
If the Cheerio Bars get hard or dried out, microwave them for 5-7 seconds for a softer bar.
