This perfectly sweet Lazy Chocolate Chip Cookie Bars recipe is an easy recipe that uses yellow cake mix and chocolate chips to make a delicious party dessert!

I love seeing these cookie bars at our family gatherings. They are dense like that of a brownie but with all the classic chocolate chip cookie flavors. They serve up easily and with minimal mess. Plus, this dessert comes together within minutes with no prep!

Chocolate Chip Cookie Bars With Cake Mix

With three simple steps, these easy chocolate chip cookie bars are a great beginner’s recipe or the perfect last-minute dessert for family gatherings. Soon, someone will be asking for the recipe, just like I did. These bars are just so good!

We tend to make these cookie bars to feed a crowd and our hungry family, so this recipe makes a large bar in a 9×13-inch baking dish. This recipe works well halved and baked in a 9×9 inch baking dish for a small batch. However, make sure you also cut the baking time down to 20 minutes too.

Ingredients

2 sticks or 1 cup of salted butter, melted

4 large eggs

2 – 15.25 ounce yellow cake box mixes

1 – 12 ounce bag of mini semi-sweet chocolate chips or measure with your heart!

How to Make Lazy Chocolate Chip Cookie Bars

Preheat the oven to 350°F and lightly spray a 9×13 inch baking dish with cooking oil.

Then, in a medium bowl, mix together the yellow cake mixes, melted butter, and eggs. Next, stir in the chocolate chips, saving a handful of chips for later.

Finally, press the cookie bar batter into the greased baking dish, sprinkle on the remaining chocolate chips, and bake for 30 minutes or once the outside edges turn golden brown. Once cooled, cut cookie bars into squares and enjoy!

Notes

Because the batter does tend to be really thick, I recommend using an electric or a hand mixer. This will ensure you have a thorough mix with the batter, leaving it smooth, not grainy.

Also, while it does not change the taste, mixing in the chocolate chip with the butter and eggs at the beginning will likely melt your chocolate, and your bars will be more brown in appearance.

You can experiment with different pan sizes. Just remember to adjust your baking time accordingly.

Storing Cookie Bars

If you are lucky enough to have leftover chocolate chip cookie bars, store them at room temperature in an airtight container for up to 5 days. If stored in an area with high heat or in direct sunlight, the chocolate might melt.

What is a Cookie Bar?

Cookie bars or bar cookies are made from stiff batter or dough that is then pressed into a pan and baked accordingly. Once cooled, they are cut into squares or bars and served. Cookie bars can be a single layer or multiple layers with fruit filling or frosting. These bars tend to be a more easily made version of their traditional cookie self but equally delicious!
