This veggie roll up recipe is basically your favorite vegetable pizza ingredients all rolled up into flour tortillas or lavash bread. It’s an easy recipe idea that takes simple flavors and turns them into a tasty and neat appetizer that can be easily enjoyed by everyone. Plus, you can make this appetizer the night before your gathering so there’s less stress the day of the party!
How to make Veggie Cream Cheese Roll Ups
Since these veggie roll ups are the perfect way to use up extra vegetables from vegetable platters or other fresh appetizers, they are a great additional vegetarian appetizer option for any party. They are also quick to make, a perfect make-ahead dish, and easy to tote around!
Ingredients for Veggie Roll Ups
- 8 ounces cream cheese, softened to room temperature
- 1 cup sour cream
- 1 Ranch seasoning packet
- 1 teaspoon dill weed
- 2 cups finely chopped vegetables
- We love broccoli, carrots, and bell peppers. You can also try out cauliflower, olives, and cucumbers.
- For this recipe I choose to do 3/4 cup shredded carrots, 3/4 finely chopped broccoli, and 1/2 cup chopped red bell peppers.
- 1 cup shredded cheddar cheese
- 4 Lavash Bread or flatbreads
- These veggie roll ups can easily be turned into a veggie pizza tortilla roll ups. Simply substitute out the 4 lavash bread for 5 extra large 10-inch flour tortillas.
Directions for Veggie Roll Ups
In a medium bowl, cream together the dill weed, Ranch seasoning packet, softened cream cheese, and sour cream. Then fold in your 2 cups of chopped vegetables and the shredded cheddar cheese.
Then divide out the veggie and cream cheese mixture amongst your lavash bread(or tortillas) and spread it out evenly, edge to edge in a thin layer.
Gently roll each bread(or tortilla) tightly starting at the short end. Place them seam side down in an airtight container. Chill in a refrigerator for at least 2 hours or overnight.
Once chilled, cut each rolled bread into 1/2 to 3/4 inch sections getting about 12 sections for each bread. *Please note if you used tortillas you will have to cut off the loose ends first.
Tips and Tricks to great Veggie Pizza Roll Ups
- Pick a variety of textures and flavors for tasty veggie roll ups. While carrots and broccoli have mild flavors, bell peppers, red onion, and olives can add a nice zesty flair.
- Make sure that all your vegetables are finely chopped to the same size. I used my food processor on pulse mode to easily control the size of my veggies. This makes for an easier time spreading out the mixture onto the flatbreads.
- Using an angled icing spatula or knife works best when spreading out the veggie and cream cheese mixture. Seriously buy one of these icing spatulas if you don’t have one already. They are a game-changer in icing any dessert but also work amazingly well when it’s time to spread out anything horizontally to you!
- Instead of using an airtight container to chill the veggie rolls, you can tightly wrap them in plastic wrap. Using plastic wrap is great when you don’t have a large rectangular container. I just prefer not to waste plastic wrap.
Veggie Roll Ups using Lavash Bread verus Flour Tortillas
While there’s nothing wrong with a great tortilla roll up, I might forever be partial to roll ups that use lavash bread. Lavash bread feels thinner to me and not as dense as your typical flour tortilla roll up. I also feel that flatbreads seem to keep better without getting gummy when moisture becomes an issue. And lastly, since you don’t have to trim the ends when using lavash bread, I am a BIG fan of less waste and more tasty appetizers! Lavash bread might be a tad more expensive but I think the payoff is worth it!
