Ice cream cakes are the best. A homemade ice cream cake is a win-win. It’s completely delicious and super affordable! Our Oreo Ice Cream Sandwich Cake was such a hit that I thought, why not make it with peanut butter? And, we were amazed. I might even love it more! It’s super simple to make, oh-so-creamy, and a peanut butter lover’s dream ice cream cake.

How to make a No-Bake Ice Cream Sandwich Cake with Peanut Butter

This Peanut Butter Ice Cream Cake is a breeze to make. It would take me 3 times as long to drive to the store and buy an ice cream cake as it would to make this easy ice cake. It’s a bit of unwrapping, some mixing, and then decorating with candies. Freeze and enjoy!

Ingredients for a Peanut Butter Ice Cream Sandwich Cake

  • 24 ice cream sandwiches, 2 boxes of 12 sandwiches
  • 16 ounces Cool Whip or whipped topping, 2-8-ounce containers, thawed
  • 1 cup creamy peanut butter
  • 1/2 cup hot fudge topping

Toppings

  • Reese’s peanut butter ice cream
  • hot fudge topping
  • Reese’s minis peanut butter cups, unwrapped
  • peanuts
  • 4 ounces Reese’s Pieces

  • 9×13 inch baking dish
  • medium mixing bowl

Instructions for making a Peanut Butter Ice Cream Sandwich Cake

First, unwrap 12 ice cream sandwiches and evenly line the bottom of the 9×13-inch baking dish. You might have to cut some to fit the exact pan dimensions. (See photos above.)

Second, place 8 ounces of the thawed whipped topping in a medium mixing bowl. Then microwave the peanut butter for 20 seconds and gently fold in the creamy peanut butter.

Next, do the same to the hot fudge topping: microwave it for 10-20 seconds, or until slightly melted. Then fold it into the peanut butter/whipped topping. Spread this cream over the layer of ice cream sandwiches.

Now, top the peanut butter cream with another layer of unwrapped ice cream sandwiches, cutting them to fit the pan.

Finally, spread the remaing 8-ounces of whipped topping over the last layer of ice cream sandwiches.

Decorate with the toppings. Add a one-tablespoon scoop of Reese’s peanut butter ice cream, sprinkle the mini peanut butter cups, drizzle the hot fudge (microwave it to thin it), and sprinkle on the peanuts. Do not add the hard-shelled Reese’s pieces until you are ready to serve the cake, as the coloring will bleed.

Cover the dish and freeze it for 2-4 hours until it’s frozen again. Serve the ice cream cake promptly once removed from the refrigerator and enjoy!!

Tips and Tricks for a GREAT ice cream sandwich cake!

Have a helping hand: If you have kids, have them unwrap the ice cream sandwiches. It saves a ton of time if they do the unwrapping while you prep the peanut butter cream layer. Plus, they love this job as it might result in a bite of leftover ice cream sandwich.

Work fast: When working with ice cream, it goes without saying that working fast is key. Make sure the non-melting items are out and ready before removing the ice cream from the freezer. Then, if needed, place the dish back in the freezer for an hour to firm it up again.

Make Ahead Ice Cream Sandwich Cake: I make this cake the day before a party. Then I top and decorate with candies or sprinkles right before the party. It saves tons of time and makes for a less stressful party!

When melting the peanut butter and hot fudge, make sure to heat it in small increments. It needs to be softened enough to mix and drizzle. Too hot, and these tasty toppings will melt your ice cream cake.

This is a delightful Peanut Butter Ice Cream Sandwich Cake recipe that takes about 15 minutes to make and tastes amazing!
